Potato salad  

with parsley pesto and 'sausages'

  • 4 medium sized potatoes, cooked 
  • 6 mini soy sausages 
  • 6 thick zucchini slices  
  • Paprika powder 

Ingredients for the pesto: 

  • 2 tbsp hemp seeds, peeled 
  • 2 tbsp of pine nuts or cedar nuts 
  • 2 cups of parsley 
  • 1 tbsp lemon juice 
  • ½ tsp salt 
  • 2 tbsp olive oil 
  • ¼ cup of water 


  • For the pesto: Mix all ingredients with a blender to make pesto.  Peel the potatoes and cut them into cubes. Mix gently with the pesto. Season it with salt, pepper and olive oil.  Sprinkle the zucchini slices with paprika powder. Put some olive oil in a pan and fry the soy sausages with the zucchini on both sides. Serve with the potato salad and enjoy.
